With the leaves turning from green to russet, the ethereal misty mornings and the last few precious golden sunny days to savour, autumn really is my favourite time of year. In this issue we are celebrating all the fabulous things this season brings. On page 36 we take a look at the hips, hawes and berries that are ripe in our hedgerows at the moment, along with some delicious recipe ideas for making the most of this free food source. Autumn also sees the British game season getting underway and, on page 54, we meet a Sussex gamekeeper to discover how he combines traditional skills with 21st century estate life. We also visit some of Britain’s hedgelayers who are keeping this age-old country practice alive (p.100). Autumn is when the rutting season begins for our red deer stags.
