Cheat days Chinese Banquet
CHINESE BANQUET CHEAT DAYS’ SPECIAL

CRISPY CHILLI BEEF
Serves: 4
NF
For the seitan:
• 125g (1 cup) vital wheat gluten
• 1 tsp chinese five spice
• 2 tsp garlic powder
• 2 tsp onion powder
• 1 tsp sea salt
• 2 tsp nutritional yeast
• ½ tsp black pepper
• ½ tsp chilli flakes
• 175ml (¾ cup) water
• 2 tbsp soy sauce
• 1 tbsp vegetable oil
To make the dish:
• 55g (1 cup) cornflour
• 3 tsp Chinese 5 spice
• Sea salt and black pepper
• 100ml (½ cup) veg oil
• 1 bunch spring onions, washed, trimmed and sliced diagonally
• 1 large red chilli, finely sliced
• 1 red pepper, deseeded and sliced
• 1 large carrot, shredded
• 4 cloves garlic, peeled and chopped
• 1 tbsp fresh ginger, peeled and grated
For the sauce:
• 6 tbsp soy sauce
• 6 tbsp sweet chilli sauce
• 4 tbsp ketjap manis (use tomato ketchup if you can’t find this)
• 1 tbsp rice wine vinegar
1 Mix all the dry ingredients for the seitan together in a large bowl, add the wet ingredients and mix everything together really well. Turn the dough out on to a work surface and knead for a couple of minutes to develop the gluten.
