Pineapple cashew and quinoa stirfry

PINEAPPLE CASHEW QUINOA STIR-FRY
Serves: 4
For the quinoa:
• 250ml (1 cup) pineapple juice
• 180ml (¾ cup) cold water
• ¼ tsp soy sauce
• 200g (1 cup) quinoa, well rinsed and drained
For the stir-fry:
• 120g (4 oz) cashews, raw and unsalted
• 3 tbsp peanut oil
• 2 spring onions, sliced thinly
• 2 cloves garlic, minced
