SEITAN SCHNITZEL AND WARM POTATO SALAD
Serves: 4
For the Schnitzel:
• 125g (1cup) vital wheat gluten
• 2 tbsp nutritional yeast
• 1 tsp onion powder
• 7 1 tsp garlic powder
• ½ tsp salt
• ½ tsp vegan chicken seasoning
• 175ml (¾ cup) vegan chicken or vegetable stock, warm
For the simmering broth:
• 1 onion, skin on and roughly chopped
• 600-700ml (3 cups) vegan chicken or vegetable stock
For the coating:
• 125g (1¼ cups) plain flour, seasoned well with salt and pepper
