Altitude Adjustment
For pressure canning, the time isn’t increased to adjust for altitude; instead, the pressure is increased. If you’re using a dial gauge, you’ll increase the pressure by 1 pound per square inch for each 1,000 feet above sea level. If you’re using a weighted gauge, you’ll increase the weight by 5 psi for elevations higher than 1,000 feet above sea level. You can use the following chart for a quick reference. However, it’s best to check the instructions that came with your pressure canner.
