Polenta with tomato, mozzarella, pesto, and Parma ham

INGREDIENTS
∗ 1 tbsp light olive oil ∗ 8x 1cm thick slices of baked polenta or precooked, shop-bought polenta, about 300g in total ∗ 2 tomatoes, cut into 8 slices ∗ 8x 1cm thick slices mozzarella cheese, about 300g in total ∗ 8 slices Parma ham ∗ 85g ready-made basil pesto
METHOD
1 Heat the olive oil in a large frying pan set over a medium heat. Add the thick slices of polenta and fry for about 5 minutes on each side, until golden brown. Remove from the pan.
2 Divide the polenta slices between 4 plates. Cut 2 tomatoes into 8 chunky slices and place equally on top of the polenta. Remove the mozzarella from the packet and slice into 8 thick slices and add to the plates. Place 2 slices of Parma ham on each stack and drizzle evenly with the pesto. Serve immediately while the polenta is still warm.
