One of my favourite things about eating a plant-based diet is the way it has opened my eyes (and taste buds!) to a whole new world of flavours and cuisines. Before going vegan, food didn’t excite me in the way it does now and I found I was stuck in a rut of eating meat with a side of vegetables. It was bland and uninspiring and cooking was a necessity rather than the pleasure it is now. I will also admit that my palate was rather unsophisticated and even a hint of spice would send me running!
Thankfully, I was lured away from a diet of pasta and potatoes when I discovered that vegan food and street food dishes are a match made in heaven! Taking inspiration from South America, Asia and even America, vegan street food is an explosion of vibrant vegetables, mock meats and spices and is, in my opinion, one of the best ways to showcase how simple plant-based ingredients can come alive to make a truly fantastic meal.
