East London is home to some of the country’s finest plant-based cuisine and Dalston’s Fed by Water certainly falls into that category. According to owner Fabio, it’s not about making good vegan food, it’s just about making good food full stop.
To this end, all attention is focused on the integrity of the ingredients - even the most basic. Fed by Water is so-called because of the attention placed on filtering all the water used in preparing the food and drink. The purity of H2O is a key part of the restaurant’s philosophy – removing impurities like lime scale and bacteria means the water (and ergo the dishes) taste better, as well as being healthier. As much thought goes into the other ingredients too – from the different types of flour imported from Italy, to the very good olive oil. (In case you’re wondering why a ladder is suspended from the ceiling – it is the one used by Italian farmers to pick olives. Only the oil yielded from the first press is used at Fed by Water).
