3 red apples, cored and coarsely grated
1 heaped tsp ground cinnamon
1 tsp ground ginger
1 tbsp lemon juice
2 level tbsp sweetener
1 large egg white*
200g ready-made low-fat custard
200g fat-free natural yogurt, mixed with vanilla extract to taste
4 ginger biscuits, crushed
12 classic ice-cream cones, to serve
1 Put the apples, cinnamon, ginger, lemon juice and 1 level tbsp sweetener in a bowl and stir to combine.
2 Put the egg white and the remaining sweetener in a large, clean glass bowl and beat with an electric hand whisk on a medium speed until foamy and starting to stiffen.
3 Whisk in the custard, yogurt and half the crushed biscuits, then stir in the apple mixture. Pour into a shallow, freezerproof container, cover and freeze for 3-4 hours, or until set.
4 Remove from the freezer, then transfer the mixture into a food processor and whizz until smooth. Return to the container, cover and freeze for 1-2 hours, or until ready to serve.
5 Add 1 scoop of the ice cream to each cone, divide over the remaining crushed biscuits and serve.
