BIG APPLE PIE
Serves: 8 to 10
For the crust:
• 300g (3 cups) unbleached all purpose flour, plus more for rolling out dough
• 55g (¼ cup) sugar
• 1 tsp salt
• 190g (1 cup) plus 2 tbsp vegan shortening
• 115ml (½ cup) ice water, plus more as needed
• 4 tsp apple cider vinegar
For the filling:
• 5 large Honeycrisp apples (or any red apple you prefer), peeled, cored, and cut into ½-inch pieces
