MACADAMIA NUTS
IDEA 1: Whip up a tasty nut based cheese with your macadamias.
HOW? To a food processor, add 215g macadamia nuts, 2 tbsp nutritional yeast, 1 tsp each garlic and onion powder, 235ml water, 1 tbsp apple cider vinegar, juice from ½ a lemon, 1 tbsp maple syrup and salt and fresh black pepper. Process the mixture until cheese is very smooth. Place the nut cheese in a bowl and sprinkle over fresh herbs such as parsley, or thyme.
IDEA 2: Creamy nut frosting for cakes.
HOW? In a high-speed blender combine 120g soaked macadamia nuts, 30g drained cashews, 60ml almond milk, 90g maple syrup, 2 tbsp coconut oil, 1 tsp vanilla and 2 tsp lemon juice. Blend until very smooth, scraping down the sides occasionally. Chill before spreading onto your cake.
