INGREDIENTS
. 600g (21oz) red quinoa, cooked
. 440g (15½oz) tinned chickpeas, drained and rinsed
. 75g (2½oz) spring onion, chopped
. 1 red pepper, chopped
. ½ a medium celeriac, peeled and finely chopped
. 3 tbsp extra virgin olive oil
. 50g (1¾oz) dried cranberries (optional)
. 15g (½oz) fresh coriander leaves, chopped, plus more for garnish
. 3 tbsp lemon juice
. 1 tsp curry powder
. 1 tbsp maple syrup
. ¾ tsp salt
. ½ tsp black pepper
. ½ tsp cumin
. ¼ tsp all spice
