Get warm and cosy with these winter meals and treats – perfect for Valentine’s Day too

Breakfast quesadilla with avocado

FOR THE QUESADILLAS

½ x 400g tin (¾ cup) of black beans, rinsed and drained

2 medium tomatoes, roughly chopped 2 tbsp tomato sauce or purée

1 spring onion (scallion), finely chopped salt and black pepper, to taste

sweet or smoked paprika to sprinkle or a few drops of hot pepper sauce, to taste

75g (½ cup) vegan melty cheese, grated

2 large wraps or corn tortillas

FOR THE GUACAMOLE

1 large ripe avocado, peeled and chopped roughly in a bowl

1 garlic clove, crushed lime or lemon juice plus salt, to taste

a pinch of chilli powder or a few drops of hot pepper sauce, to taste

1 Mash the black beans roughly. Add the tomato sauce, spring onion, seasoning and paprika or hot sauce.

2 Spread one half of the mixture on each wrap. Sprinkle with the vegan cheese. If you prefer, mash the avocado on part of each tortilla and sprinkle the guacamole seasonings on top – or just serve the guacamole on the side.
