What do you like to eat?
I eat a lot of veg and beans, especially black beans. They’ve been my lockdown saviour and they’re really versatile. They’re especially lovely with roast veg; my favourite mix is roast beets, carrots and parsnips. Beets are high in nitrates and great for runners since they’ve been shown to reduce the amount of oxygen you need to sustain energy during exercise.
