• 4 fresh ears of corn, with husks
• 2 tsp olive oil
• Handful of chopped coriander
• Grated zest ½ lime
• 1 red chilli, finely sliced (optional)
For the zesty mayo:
• 150g (1 cup) cashews, soaked overnight
• 1 tbsp olive oil
• Flesh ½ avocado
• Juice 2 limes
• Grated zest ½ lime
