BUNNY & PANDA BEAR MACAROONS

FOR THE MACAROONS

• 160g (5½oz) ground almonds

• 160g (5½oz) icing sugar

• 120ml (4floz) free-range egg whites

• 1 tsp vanilla extract

• a pinch of salt

• 150g (5oz) caster sugar

• 60ml (2floz) water

TO DECORATE

• 1 vanilla pod, or 2 tsp vanilla bean paste

• 250g (9oz) soft unsalted butter

• 2 tsp vanilla extract

• 500g (1lb 2oz) icing sugar, sieved

• pale pink food colouring gel

• black and pink edible food pens (fine-tip), for face details
