Get the moreish munchies and tasty tipples ready – it’s party time!

Lychee, mint and elderflower mocktail

Forget soda and lime, this drink is definitely taking your non-alcoholic beverages to the next level! The refreshing flavour of the lychee stays around for a while after every sip.

Serves 4 | Prep 10 mins | Cook none | Calories 79 (per serving)

230g (8oz) tin of lychees and juice a small handful of fresh mint juice of ½ a lemon

1 tbsp elderflower juice lemon lime and bitters drink lots of ice

1 You can adjust this recipe depending on how many mocktails you’d like to make. If just making for a few people, you can use half the tin of lychees and juice, or if you’re making for more, then use the full can, but reserve some lychees for decoration. Add them and the remaining ingredients to a blender except for the lemon lime and bitters drink.

2 Use the pulse button on your blender to make it into a crushed ice consistency. If you like it a bit runnier that’s fine too, adjust the amount of ice to your taste. You can’t really go wrong. It’s going to taste amazing anyway!

3 Pour the mixture into cocktail glasses about threequarters full, then top up with the lemon lime and bitters drink.

4 Decorate with reserved lychees and mint.
