CHICKEN, SWEET POTATO & COCONUT CURRY

• 2 tbsp groundnut (peanut) oil
• 8 chicken thighs (on the bone)
• 1 large onion, thinly sliced
• 2 garlic cloves, crushed
• 1 tbsp grated fresh root-ginger
• 1 red chilli, shredded
• 1 tbsp red Thai curry paste
• 2 tsp ground turmeric
• 1x 400ml/14floz coconut milk
• 2 large sweet potatoes, peeled and cubed
• chicken stock or water (if needed)
• 1 tbsp black mustard seeds
• a handful of coriander (cilantro), chopped
