FLUFFY PANCAKE WITH BERRIES Separate an egg into 2 mixing bowls. Add 30g sifted plain flour, a pinch baking powder, 30ml semi-skimmed milk and a few drops vanilla essence to the yolk, then whisk until smooth. With clean beaters, whisk the egg white to soft peaks, then carefully fold into the yolk mixture. Pour into a non-stick pan sprayed with oil and cook for 1–2 min each side. Serve with 1tbsp fat-free Greek yogurt and 80g mixed berries, plus a skinny latte 313kcal
