Rachel also has a new recipe book out, Vegan Eats: Tasty Plant-Based Recipes for Every Day, which takes staple Caribbean recipes – inspired by her Sierra Leonean and St Lucian roots – and transforms them into delicious, vegan-friendly alternatives. She’s also passionate about leading an active lifestyle, and rejects claims that a plant-based diet dulls energy levels.
