600g lean pork mince (5% fat or less)
4 spring onions, finely chopped
2 garlic cloves, crushed
2 tbsp drained and finely chopped roasted red peppers in brine from a jar
2 tbsp very finely diced gherkins, plus 2 sliced gherkins
Low-calorie cooking spray
200g plain quark
Juice of 1 lemon
1 tsp mustard powder
4 little gem lettuces, leaves separated
4 tomatoes, sliced
¼ cucumber, thinly sliced
1 red onion, sliced into thin rings
1 Put the mince in a bowl with the spring onions, garlic, peppers and diced gherkins and mix together with your hands. Shape the mixture into 4 burgers. Spray a large, nonstick frying pan with low-calorie cooking spray and place over a high heat. Fry the burgers for 5 minutes on each side, or until cooked through.
2 Meanwhile, for the dressing, put the quark, lemon juice and mustard in a small food processor, season and whizz until well combined. Divide the lettuce, tomatoes, cucumber, red onion and sliced gherkins between 4 bowls. Top each with a burger and drizzle over the dressing to serve.
