A perfect frying pan
I have a cast-iron pan for pancakes, but this dinky 20cm stainless steel pan with an aluminium core from Samuel Groves is my new favourite for making scrambled eggs, omelettes or simply melting butter for sauces - like the saffron butter on p54 and chilli butter for the Turkish eggs on p66. It washes up easily (don’t you hate scrubbing scrambled eggs off supposedly non-stick pans?) and the design is sturdy enough not to wobble on the stove. The pan has great heat conductivity and can be popped under the grill or in the oven like an American-style skillet… Ideal for making the leftovers soufflé omelette on p104.
