GET WILTING
You’d wilt spinach or watercress by stirring it into a dish at the end of cooking, so why not try it with other leaves? Add salad leaves to stir-fries, pasta sauces, risottos or omelettes. They only need 30 seconds in the heat of the dish to soften, so add them right at the end.
