SEASON’S EATINGS
Head of Food Tom Shingler’s favourite produce for August
CARROTS I went to France for my holiday this year and became a little obsessed over the selection of carottes râpées in the supermarkets. It’s coarsely grated carrots in a zingy dressing, usually mustard-and-lemon-based. Crunchy, sweet, earthy and simple, it pairs with so many things – I can’t stop making it this summer.
CUCUMBERS My two-year-old gets through a cucumber every couple of days, so I’ve been inundated with the things recently. They’re brilliant in salads, but what I really like is cutting them into thick batons and throwing them into a stir-fry. Add them at the end and cook for 1-2minutes for a pleasing, refreshing crunch.
REDCURRANTS These little edible jewels – once a Christmas essential until the advent of the cranberry – are actually at their peak in summer and woefully underused. Use them in any pud where you might include berries, or serve them in a compote with richer meats like duck and venison – their tart sweetness provides the perfect counterpoint. NO-AND-LOW GROWS More people are drinking low and no alcohol alternatives than ever, according to a survey from The Portman Group and YouGov. Results indicated that well over a third (38%) of UK drinkers are now choosing moderate alternatives semi-regularly – compared to 35% in 2023 and 29% in 2022.
