THE SCIENCE OF JAM MAKING
To create a traditional jam, fruit and sugar are boiled in large quantities until they reach a soft, spreadable consistency. Boiling reduces the water content and helps release the natural chemical glue in fruit, known as pectin. It’s the combination of pectin and acid in the fruit, plus added sugar, that allows the mixture to set.
