DON’T BIN IT!
Cream or crème fraîche
Often bought for a specific recipe, it’s easy to leave half-empty pots of dairy goodness at the back of the fridge, soon to go mouldy. Emily Gussin is determined to change that
HOW TO CHECK IT’S OKAY
Cream and crème fraîche will usually last longer than the ‘use by’ date on the pack, as long as you keep it covered and there’s no contamination from double dipping. Your senses are the best way to decide what to do with it. Once the cream/crème fraîche smells a bit funky, use it in cooking rather than eating raw. If it looks discolouredormouldy, unfortunately it’s too late – but do clean out the pot so it can be recycled.
