KITCHEN CUPBOARD HERO
1 BUCKWHEAT AND YOGHURT PANCAKES

(Serves 1, 300 cals)
50g buckwheat flour
2 eggs
100g Greek yoghurt (plus 1 tbsp for topping)
2 tsp cinnamon
1 tsp vanilla essence
Oil, for frying
Handful of berries
Using an electric whisk, mix together the flour, eggs, yoghurt, cinnamon and vanilla. Heat 1 tsp oil in a pan on a medium heat; pour in small amounts of the mix to make mini pancakes. When they start to ‘bubble’ (2-3 mins), flip and cook on other side. Serve and top with yoghurt and berries.
