“If you can’t get fresh prawns, use frozen. And here’s my top tip: soak the bread in the olive oil after you’ve eaten the prawns.”
• 6 king prawns, peeled, de-veined and heads removed
• Salt
• 150ml/¼pt olive oil
• 1 red chilli, finely diced
• 1 large clove garlic, peeled and finely sliced
• 50g/2oz grated fresh ginger
• 15g/½oz fresh coriander, finely chopped
• Juice of 1 lemon
• 1 sourdough loaf/baguette, sliced
1. If you are using frozen prawns, defrost and place on paper towel to dry, then season with salt (otherwise move on to step 2).
2. Place a pan over a medium heat, add 2 tsp of the olive oil and fry the prawns for 2 minutes, turning halfway through.
3. Add the chilli, garlic, ginger and coriander, toss and cook for a further minute, then add the lemon juice and the rest of the olive oil. Note: you just want to warm the olive oil through.
4. Turn off the heat and transfer the prawns with their juices and oil to a warm serving bowl.
5. Toast the slices of bread and serve on the side of the dish.
