• 225g/8oz baking spread, straight from the fridge
• 225g/8oz light muscovado sugar
• 4 large eggs
• 225g/8oz self-raising flour
• 225g/8oz sultanas
• 100g/4oz currants
• 100g/4oz ready-to-eat dried apricots, snipped into pieces
• 50g/2oz candied peel, chopped
• Finely grated zest of 2 lemons
