ROASTED RED PEPPER GNOCCHI
Serves 4 Takes 20-25 minutes Allergy information Egg-free, nut-free, vegetarian
INGREDIENTS
• 1 x360g drained jar of roasted red peppers
• 2 cloves garlic, peeled but left whole
• 1/2 tsp oregano
• Salt and freshly ground black pepper
• 1 x400g tin chopped tomatoes
• 500g/1lb 2oz gnocchi, torn into small pieces
• 125g/41/2oz mozzarella ball
• Ahandful of fresh basil leaves
1. Add the red peppers, garlic, oregano and some salt and pepper to a blender. Blitz until smooth.
