SMOKY FRIED JERSEY ROYALS WITH CRAB MAYO & LEMON AIOLI
Serves 2 for a main course or 4 as a starter Takes 40-45 minutes
INGREDIENTS
• 450g/1lb Jersey Royal potatoes, scrubbed and cut into quarters
• 150g/5oz white crab meat
• 50g/2oz brown crab meat
• Freshly ground black pepper
• 3 tbsp olive oil, plus extra to drizzle
• 2 tsp sweet smoked paprika
• 100g/4oz watercress
• Ahandful of red chicory
• Asqueeze of lemon juice
• 2 tbsp baby capers, to serve
• Lemon wedges, to serve For the aioli
• 1 clove garlic, peeled and roughly chopped
• 2 egg yolks
• 1 lemon, halved
• Sea salt
