ELDERFLOWER TURKISH DELIGHT
Makes around 40 pieces Takes 1 hour 10 mins-1 hour 25 mins, plus overnight setting
“I first tried elderflower Turkish delight after reading the lovely John Wright’s recipe and haven’t stopped making it since. Mine is made in the traditional way, so the recipe doesn’t include gelatine. It’s soft, squishy and delightfully summery. If you can’t get elderflower, why not try this recipe with lilac or lavender flowers instead?”
INGREDIENTS
• 20 elderflower heads
• 4 tbsp lemon juice
• 750g/1lb 10oz white sugar
• 100g/4oz cornflour, plus 2 tbsp for dusting
• Coconut oil, for greasing
• 2 tbsp icing sugar, for dusting
1. First, take the elderflower sprays, snip the flowers from their stalks and put the loose flowers in the centre of a clean muslin cloth. Gather the sides of the cloth and tie with food-safe string, so the flowers are contained. Make sure you leave a long piece of fabric or string to hold them while they’re suspended in the pan. Put to the side for later.
