BUTTER BEAN ARRABBIATA STEW

“This is such a straightforward stew, which takes the vibrant flavours of tomatoes, chillies and garlic from an arrabbiata pasta sauce and uses beans instead of pasta.”
INGREDIENTS
• 1 tbsp olive oil
• 4 cloves garlic, peeled and chopped
• 1 red chilli, deseeded and chopped
• 2 x 400g tins butter beans, drained and rinsed
• 2 x 400g tins chopped tomatoes
• ½ tsp sugar
• 1 tsp salt
To serve
• Grated vegetarian Italian hard cheese, to taste
• 15g/¼oz fresh flat-leaf parsley, chopped

Set the slow cooker to high. Add the oil, garlic and chilli and warm them through until they start to smell fragrant.
