Pilaf with chicken, prawns and chorizo

INGREDIENTS
✱ 300g chicken breast fillet, cut into bite-sized pieces Q 2 tbsp lime juice
✱ 4 tbsp olive oil ✱ 200g chorizo, diced ✱ 2 onions, finely diced ✱ 2 cloves garlic, finely diced ✱ 250g long grain rice ✱ 2 tbsp tomato purée ✱ 150ml dry white wine ✱ 500ml chicken stock, plus extra, if needed ✱ Cayenne pepper ✱ 2 red peppers, cut into strips ✱ 400g prawns, peeled and de-veined ✱ 4-5 cherry tomatoes ✱ 2 limes, each cut into eight wedges ✱ 3 tbsp flat-leaf parsley, chopped ✱ salt and pepper
METHOD
1 Briefly marinate the chicken breasts in freshly-squeezed lime juice, salt and ground black pepper in a mixing bowl.
2 In a large frying pan or saucepan, heat half of the oil and quickly fry the chicken together with the chorizo. Remove from the pan and set aside on a paper towel or plate.
