Check crops such as onions, garlic and leafy salads regularly to spot any flower stems starting to form. Bolting (running to flower and seed) can ruin the crop, as plants put their energy into the flowers, rather than the leaves or bulbs. It can be triggered by high day temperatures, especially in dry soil, or cool nights.
To deter bolting, water regularly and mulch the soil. Snip off any flowers early and harvest bolting crops as soon as you can.
Cook the flower buds (scapes) of bolting onions for a tasty treat
