Fish goujons with sweet chilli and coriander mayonnaise

INGREDIENTS
* 4-6 frozen hake steaks, defrosted *125g cornflour *100g dried breadcrumbs *100g desiccated coconut *2 large eggs, lightly beaten *sunflower oil, for frying *250g good-quality mayonnaise *2.5 tbsp sweet-chilli sauce *2 tbsp freshly chopped coriander (optional) *basmati rice and salad, to serve *lemon wedges, to serve
METHOD
1 Cut each piece of defrosted fish into strips. Put the cornflour into a bowl and season with a little salt. Put the breadcrumbs and desiccated coconut into another bowl and crack the 2 large eggs into a third bowl.
2 Dip each piece of fish into the cornflour to lightly cover, then dunk into the beaten eggs and then finally the crumb mixture. Place the fish strips onto a lined baking tray and refrigerate until ready to cook.
