Make the most of your leftover ingredients with these recipe ideas
ROLLED OATS
IDEA 1: Prep overnight oats for tomorrow’s breakfast.
HOW? In a small bowl (or Tupperware box if you will be consuming these oats on-the-go), add 120ml coconut or almond milk, 1 tbsp chia seeds, 1 tbsp maple syrup and 45g rolled oats. Mix well and place in the fridge to set overnight so they are ready to be enjoyed come dawn. Peanut butter and fruit make a great topping. Or, add a tbsp of cacao into the mix when you add the oats for a chocolatey flavour.
IDEA 2: Top your crumble with some oats.
HOW? Place 35g of wholemeal flour with 35g rolled oats into a mixing bowl. Add 35g of chopped vegan butter and grind together with the other ingredients using your fingertips. Once your mixture starts looking like a crumble should, add 20g of caster sugar and give it a good mix. Place the crumble mix on top of your favourite fruit mix to use in a crumble. Bake at 190 °C (375 °F, Gas Mark 5) for 20 minutes.
