This pizza came out of our attempt to satisfy kids who just wanted plain cheese pizza, and viewed the Margherita with suspicion and wouldn’t eat it. The white blobs of melted mozzarella, plus all that basil, seemed too weird. So, we created something closer to a traditional cheese pizza, but packed with more flavour than something you’d get at a corner pizzeria.
I like to turn up the heat with some crushed red pepper and sometimes even a little Calabrian Chile Sauce. The pizza was so popular, it became our second bestseller next to the Margherita.
