TOMATO AND HERB CRACKERS WITH MACADAMIA CREAM CHEESE

These crispy, savoury crackers keep well and are a delicious accompaniment to almost anything. Why not partner with houmous, smashed avocado, salsa or pate, to create a delicious light lunch or sumptuous snack.
For the crackers:
• 300g (2 cups) flax seeds
• 720ml (3 cups) water
• 65g (½ cup) pecans
• 55g (1 cup) sundried tomatoes
• 3 cloves garlic, peeled and grated
• 2 tbsp onion powder
• 2 tsp sea salt flakes
• 1 tsp chilli flakes (optional)
• ½ tsp black pepper
• Small bunch fresh basil, finely chopped
• Small bunch fresh chives, finely chopped
For the cream cheese:
• 95g (¾ cup) macadamia nuts
