Cherry & Almond Chocolate Brownies

Dry ingredients
• 100g (3½oz) self-raising flour
• 70g (2½oz) ground almonds
• 175g (6oz) golden caster sugar
• 3 tbsp cocoa or cacao powder
• 125g (4½oz) pecans, roughly chopped (optional)
• ½ tsp salt
• ½ tsp baking powder
• 95g (3¼oz) glacé cherries, roughly chopped
Wet ingredients
• 200g (7oz) vegan dark chocolate, broken into squares
• 4 tbsp coconut oil
• 245ml (8¼floz) plant milk
• 1 tsp vanilla extract or paste
• ½ tsp almond essence, optional
1 Preheat the oven to 180ºC/Gas Mark 4.
2 Line a 20cm square (8in) tin with baking parchment.
3 Thoroughly combine all of the dry ingredients in a large mixing bowl and set aside.
