Bangin’ BBQ Caulilower Wings
INGREDIENTS For the caulilower
• 1 tsp oil
• 94g (3¼oz) plain flour
• 30g (1oz) cornmeal (or use extra plain flour)
• 1 tsp salt
• 1 tsp onion powder
• 1 tsp garlic powder
• ½ tsp dried thyme
• ½ tsp freshly ground black pepper
• 120ml (4l oz) unsweetened non-dairy milk
• 120ml (4l oz) water
• 1 medium caulilower, broken into bite-size florets
For the BBQ sauce
• ½-1 jalapeño pepper, left whole with just the stalk removed
• 370g (13oz) tomato purée
• 240ml (8l oz) pineapple juice (from a can, carton or freshly squeezed)
• 70g (2½oz) dark brown sugar or coconut sugar
• 60ml (2l oz) blackstrap molasses or maple syrup
• 110ml (3¾l oz) apple cider vinegar
• 1 tsp garlic powder
• 1 tsp onion powder
• 1 tsp liquid smoke or smoked paprika
• 1 tsp salt
• 1 tsp English mustard
• ½ tsp freshly ground black pepper
METHOD
1 Preheat the oven to 220°C/ Gas Mark 7 and line a large baking sheet with parchment paper. Grease the parchment with a light brush of any cooking oil.
2 In abowl, whisktogether theflour, cornme al (if using), salt, onion powder, garlic powder, thyme and black pepper. Gradually add the non-dairy milk and water, whisking as you go, to work out the lumps and create a smooth batter.
