Easy Banana & Passion Fruit Bread
Makes 1 loaf or 8 servings
This is a tropical and fun recipe for when you’re craving something comforting, but refreshing. Interestingly, the viscous texture of the passionfruit purée acts as a binder instead of eggs. The bananas give the loaf extra moisture and sweetness. However, more sugar is needed to balance out the tartness of the passionfruit. The high amount of fruit in this recipe makes a dense and moist loaf.
Dry ingredients:
• 240g (1 ½ cups) white rice flour or (188g) plain flour
• 170g (1 ½ cups) almond meal
• 95g (⅔ cup) coconut sugar
• 1 tbsp (14g) baking powder
Wet ingredients:
• 2 ripe bananas (approx. 240g)
• 3 passion fruit, purée only
• 285ml (1 ¼ cup) plant-based milk, such as almond, soya or coconut
• 3 tbsp (45ml) sunflower or olive oil
To decorate:
• 170g plant-based yogurt, such as coconut, soya or almond
• Extra passion fruit purée, as desired
You will also need:
• 9 x 4-inch (23 x 10 cm) loaf pan and parchment paper.
1 Preheat the oven to 160°C/325°F/Gas 3. Line a 9 x 4-inch (23 x 10cm) loaf pan with parchment paper.
2 Add all the dry ingredients to a large bowl or food processor. Mix until there are no lumps and everything is combined.
3 In a separate bowl, mash the bananas and mix with the passion fruit, breaking up any long strands of purée. Add the fruit and the wet ingredients to the dry ingredients and mix until all of the components are evenly incorporated.
