MAKE AHEAD
Make up to the end of step 2, cover and chill in the fridge until ready to cook. Make the salad just before serving.
FOOD TEAM’S TIPS
The chimichurri packs a hefty chilli punch. If you prefer less spicy food, add only ¼-½ red chilli. Chimichurri is a great sauce for other grilled meats and steak.
• 1.5kg free-range chicken wings, tips removed, halved through the joint
