”Croquetas are one of the biggest sellers in my restaurants. We like to play around with new flavours – sometimes we go a bit crazy, but they normally work! If you’re a fan of mint, add a few finely chopped leaves at the same time as the apple and morcilla for a really fresh flavour.”
