CLASSIC XMAS DAY RECIPES

Create something extraordinary this Christmas

Creamy celeriac mash

Serves 6 | Prep 15 mins | Cook 20 mins | Calories 169 (per serving)

2 celeriac, peeled and cut into cubes

3 garlic cloves, peeled

600ml (1pt) whole milk

a pinch of freshly grated nutmeg

a pinch of ground ginger

a splash of double cream

a knob of butter

a small bunch of fresh flat-leaf parsley, chopped

maple syrup, to finish

salt and freshly ground black pepper

1 Place the celeriac, garlic and a pinch of salt in a pan with just enough milk to cover.

2 Bring to the boil and cover, simmering gently for 20 minutes, stirring occasionally until tender.

3 Drain any remaining milk and reserve.

4 Using a hand blender, blitz the celeriac to make a purée, pouring in just enough of the reserved milk to give a smooth consistency.

5 Add the spices, cream and butter, then blitz again. Stir through the parsley and season to taste. Drizzle over the maple syrup to finish.

Pork and apple stuffing with walnut and herbs

30g (1oz) butter

1 large onion, peeled, diced

2 rosemary sprigs, leaves removed and chopped

6 thyme sprigs, leaves picked

2 garlic cloves, peeled, finely chopped

900g (2lb) pork mince

1 large free-range egg

1 Pink Lady® apple, diced, for the stuffing mix

100g (3½oz) walnuts, roughly chopped, plus extra to garnish

a small bunch of sage leaves, finely chopped

grated zest of 2 large oranges (one for the stuffing, one for garnish)

30g (1oz) gluten-free breadcrumbs
