I started eating well after a flatmate suggested some symptoms I’d been experiencing might be down to my diet. I went to a nutritional therapist, and as soon as I felt the effects of great nutrition firsthand, it inspired me so much that I left my job as a PA [aged 28] and trained as one myself. My kind of food is simple, fresh, real, colourful and varied. It’s based mainly on lots of delicious fresh vegetables and fruit, with a portion of protein and some healthy fats at every meal.
