Swedish researchers have found the best way to access antioxidants in spinach. The study compared different ways of prepping spinach to maximise the level of lutein, an antioxidant carotenoid that is found in leafy green vegetables. They fried, steamed and boiled it for different cooking times, cooked it in soups and stews, and reheated it in lunchboxes, then tested the lutein content for each method.
