There are few dishes in the world that aren’t improved by a knob of butter. Whether it’s used for frying onions, basting meat, drizzled over vegetables or spread on toast, butter adds a richness to food that oils can’t quite achieve.
But while good old plain butter is great, it’s also the perfect vehicle for all manner of other flavours. Flavoured (also known as ‘compound’) butters are used by professional chefs the world over, as they offer a way to add flavour and richness to dishes in an instant. They range from the simple, such as a garlic butter to be spread over bread, to the more complex, such as the deeply delicious niter kibbeh, a spiced clarified butter that’s a popular component of Ethiopian cooking.
