MAKE AHEAD
The cheesecake can bemade up to 2 days ahead. Cover and store in the fridge until ready to serve.

This recipe is for the red Dubonnet jelly-topped cheesecake (pictured).
If you’re serving a crowd and would like to make the Union Jack version on the cover, you’ll need to make three cheesecakes with three toppings: one with the Dubonnet jelly topping (here) and the other two with the toppings on p52. Arrange the slices in the Union Jack pattern to serve.
