Beetroot bourguignon
A classic beef bourguignon is so comforting, we wanted to create an easy, vegan version. It has the rich elements of a traditional bourguignon, but the vegetables are roasted to add a deeper, charred flavour and the beetroot adds a hit of sweetness.
